Goth Girl Carbo-Salad

It only took a couple of months, but I am officially sick of eating sandwiches. I need something new but easy to eat, something that will pack an energy wallop on the go. Goth Girl doesn’t know it, but she saved the day by sending me her Aunt’s tortellini salad recipe.

I didn’t actually eat it the day she brought it over a giant bowlful for the Graduation Linner Party. I can’t eat during fêtes, especially if I’m the one hosting them. There was a lot of the salad left over, so I spent the next week chomping on it during snack time. This salad keeps really well. And for the summer time when you don’t want anything bulky, it’s perfect to give you something delicious but not too heavy.

The special taste combination comes from pine nuts and the slight touch of Parmesan cheese. I think it needs a little boost to round out the flavor profile, so I’m going to add sofrito.

In a large serving bowl add:
1/4 cup apple cider vinegar (use red wine vinegar for a milder touch)
1 tsp Dijon mustard
1 Tbsp sofrito
salt & pepper to taste

With a whisk, drizzle in 1/4 cup olive oil to mix.
Then, stir in:
1 Tbsp minced fresh parsley or cilantro
1 Tbsp fresh dill
2 tsp dried basil

Add vinaigrette to:
1 lb blanched tortellini
1 cup shredded ham (your choice deli meat)
1 shredded pepper (or roasted pepper in a jar)
1/3 cup thinly sliced scallion
1/4 cup toasted pine nuts
2 Tbsp freshly grated Parmesan cheese

Toss gently and chill covered for one hour.
